Here is some more information from my wife, Elizabeth, regarding her tasty recipe:

Dear GFCF Friends -
I am so thrilled to report that I have found a fun Halloween treat, that, incidentally, I never
would have figured out had I not been doing GFCF.... Anyway, here is what my husband calls,
"Rat Fink Eyeballs:"
Ingredients:
EnerG Wylde Pretzels - Circle shaped ones (incidentally, it's really hard to find round
non-GFCF pretzels -- so we're in luck!!!)
Elyon mini marshmallows (or any GFCF mini marshmallows)
Enjoy Life chocolate chips (mini) or Trader Joe's chocolate chips

There are two ways to make 'em:
Conventional method:  grease a pan.  Put the pretzels down on pan.  Chop a bunch of mini
marshmallows in half (because otherwise they'll puff up too much when you bake them).  
Place one half in the center of each pretzel, cut side up. Bake a few minutes (or lightly toast)
until they puff up a little bit.  Take them out of the oven, and immediately push a chocolate
chip, point side down, into each marshmallow.  Place them side by side, let cool, and there
you are!
Microwave method:  Do the same as above but on arrange pretzels and marshmallow halves a
greased microwave safe plate.  Watch carefully!  It only takes a few seconds for the
marshmallows to puff up.
A GFCF diet means gluten free, or "casein" free, i.e. dairy free.  Many people are on this
diet,or have their children on this diet for what are really noticeable health affects.  Children
with Autism seem to really benefit from this diet.  If you are looking for help and more
